Professional Personal Chef



Having  dinner  in  an fashionable restaurant feeling at home and being, surprisingly, in  
your  own  house, recreating the refined and elegant atmoshere of a lounge in the  
welcoming,  confortable  intimacy  of your dining room or in some other different or  
typical locations: that's the main mission of a personal chef, that's our main aim.

When  creating  your  favourite  dishes, he focuses his attention and takes care of the  
total  respect of the ingredients seasonality and, if possible, supplying them directly  
within his living area (km 0 storage)

He is the main director of the event ( a romantic dinner, a family party, a banquet), he is  
the translator  of  the customer's wishes and exigences, and for him the setting,  
preparation and service are provided and looked after in all details.


My  idea of cooking finds its roots in my passion for food. My region, Apulia, offers a  
wide fan of typical ingredients and so many different preparations. It is very easy to  
state that our best cooks have been our “grannies”, those women who had to invent  
extraordinary dishes using a few ingredients  available in their kitchen and vegetable  
garden.
But it is not sufficient and satisfying to reproduce and copy the main recipes of our  
tradition!!  
I have always been looking for new ingredients, rediscovering  and appraising old and  
often forgotten   cooking   techniques,   trying   to   use  them  again  following  my   
personal  idea of food innovation and fusion.
Fruit and vegetables, natural aromatic herbs, the “treasures” of our Adriatic sea  
(prepared both raw or cooked), our local meat...these are the ingredients I like to handle  
and manipulate with a  double value and satisfaction: mine (when transforming them and   
succeeding in creating savory dishes)  and the diner's (who lives a multisensorial eating  
experience  involving  firstly  his  sight,  then  passing  through his smelling and finishing  
by his tasting).
The quality of raw materials is essential, we only use local  0 km raw materials, supplied  
by local producers who are particularly careful to the  quality and freshness of their  
products.
Together with the recipes coming from Apulian tradition, our food offer also includes   
preparations belonging to other Italian regional traditions (those which allowed Italian  
cooking to become great all over the world) and  some international ones.
